Oatmeal chocolate chip
…a family favorite for 4 generations
Ingredients
2 cups shortening (including 1 cup butter)
1+1/4 cups white sugar
1+1/2 cups brown sugar
4 eggs
2 teaspoons hot water
2 teaspoons vanilla
3 cups flour
2 teaspoons baking soda
1 teaspoon salt
4 cups oatmeal
1 package (12 oz.) chocolate chips
Beat shortening and sugars together until creamy. Add eggs, hot water and vanilla, and continue to mix well. Sieve dry ingredients together, and stir them into shortening mixture. Add oatmeal and chocolate chips and mix.
Bake for 10 - 12 minutes at 350. Remove as soon as tops begin to look golden brown. Check several for quality control.
Scotch Shortbread Cookies
…first made for my dad as a present. Luckily, he was willing to share.
Ingredients
1 cup butter
1/2 cup confectioners’ sugar
2 cups flour
1/4 teasp. baking powder
1/4 teasp. salt
Work butter with spoon until creamy. Add sugar gradually, continuing to work until texture is light. Stir in sifted dry ingredients. Chill briefly, then roll or pat dough to 1/4 inch thickness. Cut into desired shapes Bake on ungreased cookie sheet for 20 - 25 minutes at 350.
